Vegan Raw Twix Bars
Base:
2 cups of almond meal (or any ground nuts you prefer)
6-8 tbsp maple syrup
1 tsp vanilla extract
Pinch sea salt flakes
Caramel:
24-30 pitted dates
4-6 tbsp almond butter
Pinch sea salt flakes
1/4 cup water
Chocolate:
1/2 cup cacao/cocoa powder
1 cup of coconut oil
1/4 cup maple syrup (add to your preference)
Sea salt flakes
Instructions
1. Combine base ingredients in a bowl and press into a lined baking tin.
2. Refrigerate base ingredients whilst making the caramel.
3. Put all ingredients for the caramel into a food processor and combine until smooth.
4. Layer caramel mixture onto shortbread base to make fingers.
5. Refrigerate caramel mixture overnight or freeze for at least one hour before cutting into fingers.
6. Combine coating chocolate mixture, dip the fingers into chocolate and place on a greased wire rack or baking paper.
7. Sprinkle with sea salt. Leave to harden for at least 20 minutes.
Best served from the fridge!
