Choc Coconut Protein Balls
Ingredients:
2 cups cashew nuts
1 cup desiccated coconut + extra for rolling
2 tbsp chia seeds
2 tbsp maple syrup
2 tbsp Bondi protein powder
3 tbsp cacao or cocoa powder
100ml melted coconut oil
Instructions:
1. Place all ingredients into a food processor and blend until smooth. If the mixture is still a bit thick, add a couple of TBS of water to the mix and process.
2. Roll the mixture into balls of your desired size (I use a tbsp or dessert spoon measurement) and toss the balls in extra coconut.
3. Place the protein balls in the fridge for at least 20-30 minutes to firm up before consumption.
4. Keep refrigerated in a container for up to one week.
